Strawberry Oat Slab

With a bit of clever thinking you can come up with something truly delicious when things are slightly past there use by date or even better when things are at their premium. This dish was made with strawberries slightly past there best and some good old boysenberry jam that had been in the pantry for ever!


Ingredients

  • 125g butter, melted

  • 1.5 cups flour

  • 1.5 cups rolled oats

  • ½ cup brown sugar

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 egg

  • ¾ cup boysenberry jam

  • 2 cups strawberries – halved

  • 2 Tbsp white sugar

  • 2 tsp cornflour


Method

  1. Preheat oven to 180°C (fan bake)

  2. Grease a 30cm long rectangle baking tin, then line it with baking paper with overhang, so the slab can be lifted out one cooked.

  3. Mix together flour, oats, sugar, baking powder and salt. Add butter and egg then mix.

  4. Measure out 1 cup of the mixture for toping and set aside. Place remaining mixture in the tin and press into the base.

  5. Now mix together the strawberries, sugar and cornflour in a bowl. 

  6. Spread the base with jam, then scatter over the strawberries. Use your hands to crumble over the remaining mixture.

  7. Bake for 35-40 mins or until the top is golden. Remove and allow to cool for 15 mins in the tin, before lifting it out.
