Christmas Lava cookies

Makes 20 - 24 cookies

So ‘Tis the time for a little Christmas baking.

Generally saying I tend to be the grinch of Xmas, until the week before, then its all go! So I’m kicking off this Xmas season a little early with these fudgy red lava Christmas cookies! These are straight forward cookies for those who don’t like their biscuits to sweet, but are festive and fun, and something the man in red would approve on his arrival on Christmas Eve.


Ingredients

  • 115g butter, softened

  • 3/4 cup brown sugar

  • 1/2 cup granulated sugar

  • 2 eggs, room temperature

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon professional red food coloring*

  • 2 cups all purpose flour

  • 1/3 cup cocoa powder

  • 1.5 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup granulated sugar

  • 1/2 cup icing sugar


Method

  1. Preheat the oven to 180c bake and line a baking tray with baking paper. Set aside.

  2. Cream the butter, brown sugar, and granulated sugar in a stand mixer, until light and fluffy. Scrape down the bowl and add the eggs one at a time, beating between each addition. Add the vanilla and red food coloring, and mix well.

  3. In a separate bowl sift together the flour, cocoa powder, baking powder, and salt to combine. Add the dry ingredients to the wet and beat together until combined.

  4. Fill one bowl with granulated sugar and one bowl with powdered sugar. Use a tablespoon to scoop cookies out or weigh out at around 30g per cookie. Roll the balls first in the granulated sugar and then in the icing sugar to completely coat the cookie balls. Place on the prepared baking tray an inch apart. Bake for 10 minutes or until the cookies have puffed up and cracked, but are still a little gooey in the center.

  5. Store in a airtight container once cool.
